Charlie Gilmore started Cormorant Cellars in 2018 when he departed working for commerical wineries to make the wines he truly wanted to craft; to free himself and go in a direction without the crutches of conventional winemaking. Cormorant is full of art and old techniques of traditional winemaking. Charlie decided to focus on Sauvignon Blanc for his first few vintages, as it has always been one of his favorite varieties. Cormorant wines comes from Organic grapes, which are pressed to ferment with the native yeast that arrives on the grapes. The flock is expanding from Sauvingon Blanc, to other single-site, single-varietal expressions including Chardonnay, Cabernet Sauvingon, Greanche Blanc, and Merlot. Charlie's hope for Cormorant Cellars is to show the deep connection between the farmer in the vineyard and the winemaker in the cellar.
